I LOVE CUCUMBERS!!! I love them any way you slice them or dice them. They are so fabulous in salads and pickles and cucumber sandwiches....I will even be happy just slicing one up and just eating it raw--right on the spot!
Down here in the deep south, they are in incredible abundance the whole summer long. I have been trying new recipes and eating them just about any way that I can get my hands on them. Typically, before a post, I have actually tried the dish or made the dish myself. However, in this case, I haven't made "new pickle" yet but will be making it tomorrow evening. But, I wanted to get the recipe out there for Talk about Tuesday. So, here is the recipe...if you have loads of cukes like we do, you might just like to try this. It's a cucumber salad, but has also been called "new pickle". Whatever you call it, I just hope that you try it! I will post some pictures of my "new pickle" as soon as I get it made tomorrow evening. If you make "new pickle", I would love to see your pictures also!

CUCUMBER SALAD OR "NEW PICKLE"
4 cucumbers
1 yellow onion
3/4 cup sugar
1/2 cup water
1 cup white vinegar
1/2 Tbsp dried dill
Peel and cut cucumbers into thin slices. Peel and slice onion thin. Mix together. Bring sugar, water, vinegar and dill to a boil. Pour over cucumber and onion. Chill well before serving.
Our family friend, Shirley Smith, raves over this recipe and says that her adult children request it over and over. I can't wait to try it! Let me know how it turns out for you!
**recipe variation--instead of peeling the cucumbers, slice them VERY thin and leave the peelings on. Pour them up into jars for some very "quick" sweet pickles! ENJOY!
