No explanations necessary...these were DELICIOUS! If you like blueberries and bananas, then you will LOVE these muffins! Let me know if you try them! Mine turned out so pretty!
BLUEBERRY MORNING MUFFINS | |
3 cups all purpose flour
1 cup sugar
1 Tbsp baking powder
1/2 tsp baking soda
2 large eggs
3/4 cup real butter (salted), melted
3/4 cup milk
1 very large extra ripe banana (or 1 and 1/2 small very ripe bananas), mashed
1 tsp good (real) vanilla extract
2 cups fresh, whole blueberries
1 cup chopped walnuts
Preheat oven to 375 degrees. Combine the flour, sugar, baking powder and baking soda in a bowl and set aside. In another bowl, beat the eggs, banana, melted butter, milk and vanilla until smooth. Add wet mixture to the dry mixture and gently mix with a "spoonula" or a wooden spoon until "just" combined--do NOT overmix (this is a very thick batter, so don't be worried at the consistency). Fold in blueberries and walnuts. Using a muffin scoop, place one heaping scoop in muffin pan that has been lined with foil lined baking cups. Bake at 375 degrees for exactly 20 minutes. Cool on a wire rack. Makes exactly 18 muffins. |
