Sunday = ROAST BEEF! Who doesn't love roast beef on Sunday? But come Sunday night, who wants to be in the kitchen again? Well, make room for "Rob's Sunday Night Special"! I tend to do most of the cooking, but tonight, when Rob and I were trying to decide what to have tonight, he suggested one of his old favorites from his childhood when he lived with his Grandmother. She didn't use hot sauce like we did, so you can leave that out if you want. We had a big container of leftover potroast from Mom's house today, but neither of us wanted hot roast beef again. So, we did a little choppin' and did a little mixin' and SHAZAM...."Rob's Saturday Night Special"! Don't knock it until you try it! It was lip smackin' goooooood!
ROB'S SUNDAY NIGHT SPECIAL
2 cups chopped left over roast beef
1/4 cup Kraft mayonnaise
Frank's Hot Sauce (to your taste--we like spicy)
FRESH white bread (We like Bunny Bread)
Since the roast had been cooked in mushroom soup and onion soup mix, there is really no need to add extra spice in addition to the hot sauce, unless you just absolutely want to. Chop the roast beef in a medium to fine dice. In a seperate bowl, whisk mayo and hot sauce to make the dressing for the roast. Pour over roast and mix until combined. Depending on your preference, you may want more (or less) mayo. Once combined, spread on white bread and ENJOY (we don't find the need for extra mayo on the bread...the mayo in the spread is enough to keep the bread moist)! Serve with some chips and salsa and your favorite soft drink (We are Coke Zero fans)!
